1/4 teaspoons Black Pepper, Ground
1/2 teaspoons Salt, Kosher
4 serving (1) Clove Of Garlic
1/2 serving (1) Yellow Onion
1 pounds Chorizo Sausage
2 tablespoons Olive Oil
4 cups Sweet Potato, Cubed I Organic
1. Peel and dice sweet potatoes and place in slow-cooker.
2. Heat olive oil, in a medium pan, sauté onions until translucent, then add garlic for a minute or two and sauté until fragrant.
Add chorizo and lightly brown for flavor. Add contents of pan to slow-cooker. Add salt and pepper.
3. Cook on high for 3 to 4 hours.
4. Once cooked through use a slotted spoon and move contents into a large bowl and mash yams with a fork.
Garnish with cilantro and serve.
